Over 2 billion people in more than 80 countries suffer from malnutrition. Vitamins and minerals are an essential element for human growth and for maintaining a healthy defence system in the body. Many countries in the world have already begun implementing mandatory projects to fortify their food systems with folic acid, iron, vitamin D, vitamin A, zinc, etc. Wheat is an important cereal crop that is consumed up to three times daily in the form of bread, pasta or biscuits. Fortifying industrial processed wheat flour is therefore the most effective way to supply vitamins and minerals to the diets of large segments of the world’s population.
